Job Description (((Manager “The Cafe Place”)))
We are looking for an experienced hands-on manager (not necessarily in the hospitality and catering profession) to motivate the staff /team and develop the menu and café needs. The successful candidate will be responsible for the overall management of the staff and the day-to-day running of the café.
They will maintain an established café environment while supporting the directors with ethos of “The Place Cafe”.

Salary: £19,500 pa, plus overtime, plus tips

Status: Permanent contract
Location: Sunderland City Center
Proposed start date: 23.06.2008
Opening days: Initially Monday to Friday- with opportunity for growth of Saturday opening
Working hours: Working hours would flocculate between 7.30am till 8.00pm, with the growth opportunity of extending till 10.00pm
Job Purpose
Responsible for day to day management of “The Cafe Place”, including maintaining excellent customer service at all times,
Managing the reception, kitchen as well as bar and dining areas, you will be a strong team-manager, preferably with some experience of managing a F&B team. Food served will be light bites, food platters, jacket potatoes, paninis, sandwiches, pies, pattisories, desserts, confectionary, veriety of coffees, other hot and cold drinks, wines, bottle beers, limited range of spririts and mixers and deli style food produnts, to be consumed in house or take away. Also arranging outside catering as per demand.

Main responsibilities
Staffing, service, training and monitoring
· General management of staff.
· Staff rotas – criteria is to meet customer demand within an agreed budget. Changes in the budget to be agreed by the Café Management Group.
· The Café Manager must be on the rota for all 40 contractual hours, although some hours may be set aside for administrative duties.
· Responsible for organising holiday and sickness cover for the café. This may occasionally mean covering for others at short notice.
· Advertising and recruitment for new staff to be arranged within the Café Management Group meetings.
· Provide adequate “induction” and “hands on training” to new workers to ensure a high quality of service, especially in relation to health, safety and hygiene matters.
· Facilitate regular meetings with staff providing an open forum for staff to be given new information. Feedback to Café Management Group.
· Responsible for organising cafe cleaning as well as ensuring that staff clear up properly during and after shifts. Ensure adequate supply of cleaning materials.
· Provide customers with a high degree of service.
Stock Control, Ordering and Financial Monitoring
· Ensure a regular stock rotation and control, including evidence of wastage and staff consumption.
· Order stock within budget using the systems supplied by the directors, ensuring good quality and variety of produce at all times.
· Maintenance of bar/kitchen equipment and organise repairs where necessary.
· Responsible for maintaining and showing evidence of the pricing structure of all foods, drinks, bar snacks and meals etc as per the systems already in place by the directors.
· Responsible for organising the staff on duty in the most cost effective way and staying within budgets.
· Ensure security measures are adhered to especially with regard to tills, safes and staff personal belongings.
· Managing, collating and recording the daily financial information and communicating the findings to the managing Director. The system of monitoring and control of cash will already be in place.
Front of House Service
· Advise and assist in the development of the menu for the Café Place.
· Maintain a high level of service to the customers.
· To provide catering services, such as hot and cold buffet/drinks to our customers using our conference facilities.
· To manage private events held in the café and the function room.
